- 2 (15-ounce) cans whole kernel corn, drained
- 1 (14.75-ounce) can cream-style corn
- 1 (8-ounce) package cream cheese, softened
- 1 cup sour cream
- 1/2 cup unsalted butter, melted (for casserole)

- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
- 1 cup panko breadcrumbs
- 1/2 cup grated sharp cheddar or Monterey Jack cheese
- 1/4 cup unsalted butter, melted (for topping)
- 1/2 cup honey
- 2 tablespoons unsalted butter (for glaze)
- 1 tablespoon water
- Pinch of sea salt (for glaze)
- Fresh chives, chopped (optional garnish)
- Fresh thyme or parsley sprig (optional garnish)
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease a 9×13 inch baking dish.
- Mix the well-drained whole kernel corn with the cream-style corn until evenly combined.
- Stir in the softened cream cheese, sour cream, melted butter, beaten egg, granulated sugar, vanilla extract, sea salt, and black pepper until smooth and lump-free.
- Transfer the corn mixture into the prepared baking dish and spread it evenly.
- Combine panko breadcrumbs and grated cheese in a separate mixing bowl. Melt 1/4 cup unsalted butter and pour it over the breadcrumb mixture, tossing until well coated.
- Sprinkle the buttery panko and cheese mixture over the corn base evenly.
- Bake for about 30-35 minutes or until bubbly and the topping is golden brown. Cover with aluminum foil if the topping browns too quickly.
- In a small saucepan over medium-low heat, combine honey, 2 tablespoons of unsalted butter, water, and a pinch of sea salt, stirring until smooth.
- Drizzle the warm honey glaze over the hot casserole before garnishing with chopped chives or a sprig of thyme/parsley, if desired. Let it rest before serving.
Notes
This dish can be made ahead and refrigerated before baking. It also freezes well, just thaw overnight in the fridge before reheating.
