Description

A delightful casserole that combines sweet and savory corn flavors with a creamy texture and a honey glaze, perfect for any gathering.

Ingredients

Scale
  • 2 (15-ounce) cans whole kernel corn, drained
  • 1 (14.75-ounce) can cream-style corn
  • 1 (8-ounce) package cream cheese, softened
  • 1 cup sour cream
  • 1/2 cup unsalted butter, melted (for casserole)
  • 1 large egg, beaten
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1 cup panko breadcrumbs
  • 1/2 cup grated sharp cheddar or Monterey Jack cheese
  • 1/4 cup unsalted butter, melted (for topping)
  • 1/2 cup honey
  • 2 tablespoons unsalted butter (for glaze)
  • 1 tablespoon water
  • Pinch of sea salt (for glaze)
  • Fresh chives, chopped (optional garnish)
  • Fresh thyme or parsley sprig (optional garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9×13 inch baking dish.
  2. Mix the well-drained whole kernel corn with the cream-style corn until evenly combined.
  3. Stir in the softened cream cheese, sour cream, melted butter, beaten egg, granulated sugar, vanilla extract, sea salt, and black pepper until smooth and lump-free.
  4. Transfer the corn mixture into the prepared baking dish and spread it evenly.
  5. Combine panko breadcrumbs and grated cheese in a separate mixing bowl. Melt 1/4 cup unsalted butter and pour it over the breadcrumb mixture, tossing until well coated.
  6. Sprinkle the buttery panko and cheese mixture over the corn base evenly.
  7. Bake for about 30-35 minutes or until bubbly and the topping is golden brown. Cover with aluminum foil if the topping browns too quickly.
  8. In a small saucepan over medium-low heat, combine honey, 2 tablespoons of unsalted butter, water, and a pinch of sea salt, stirring until smooth.
  9. Drizzle the warm honey glaze over the hot casserole before garnishing with chopped chives or a sprig of thyme/parsley, if desired. Let it rest before serving.

Notes

This dish can be made ahead and refrigerated before baking. It also freezes well, just thaw overnight in the fridge before reheating.
