- 1 cup rice
- 2 cups chicken broth
- 1 lemon (juiced and zested)

- 1 teaspoon dried rosemary

- Fresh parsley for garnishing
Instructions
- In a slow cooker, add the chicken thighs or breasts.
- Rinse the rice and add it to the slow cooker.
- Pour in the chicken broth, lemon juice, and lemon zest.
- Drizzle with olive oil and sprinkle with thyme, rosemary, salt, and pepper.
- Stir gently to combine the ingredients.
- Cover and cook on low for 360 minutes or high for 240 minutes, until the chicken is cooked through and the rice is tender.
- Once cooked, fluff the rice with a fork and serve garnished with fresh parsley.
Notes
Make sure to rinse the rice before adding it to remove excess starch. For extra flavor, marinate the chicken in lemon juice and herbs for a few hours before cooking.
