  • 4 breasts Boneless, skinless chicken
  • 2 tablespoons Olive oil
  • 3 cloves Minced garlic
  • 4 ounces Cream cheese
  • 1 cup Shredded mozzarella cheese
  • 1 tablespoon Italian seasoning
  • 2 cups Broccoli florets
  • 1 cup Cherry tomatoes, halved
  • 2 cups Baby spinach
  • Salt and black pepper to taste

Instructions

  1. Pat chicken dry and season both sides with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a large skillet over medium-high heat until shimmering.
  3. Add chicken and sear 4–5 minutes per side until golden and cooked through to 165°F. Remove chicken to a plate and tent with foil.
  4. Reduce heat to medium. Add a touch more oil if the pan is dry, then sauté minced garlic for 30–45 seconds until fragrant.
  5. Add broccoli and cherry tomatoes. Sauté 3–5 minutes until broccoli is bright and just tender; tomatoes should blister slightly.
  6. Lower heat to medium-low. Stir in cream cheese in small pieces and let it melt into the pan juices while stirring to form a smooth sauce.
  7. Sprinkle in mozzarella and stir until melted and glossy.
  8. Return chicken to the skillet, nestling it into the sauce. Spoon sauce over the chicken and simmer for 2 minutes to meld flavors.
  9. Add spinach and fold gently until wilted, about 1–2 minutes. Adjust seasoning with salt and pepper, to taste.

Notes

Serve over mashed potatoes, steamed rice, or buttered pasta. Can be made dairy-free by substituting with coconut cream and dairy-free cheese.
