Ingredients

  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 can (20 oz) crushed pineapple, drained
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup whipped topping

Instructions

  1. 1. Preheat oven to 350°F and line 9×13 pan.
  2. 2. Cream butter and sugar until fluffy.
  3. 3. Beat in one egg and vanilla.
  4. 4. Mix in flour, baking powder, and salt.
  5. 5. Press dough into pan and bake 12 to 15 minutes.
  6. 6. Mix drained pineapple with egg and sugar.
  7. 7. Spread pineapple mixture over crust and bake 18 to 22 minutes.
  8. 8. Cool completely.
  9. 9. Beat cream cheese and powdered sugar, fold in whipped topping.
  10. 10. Spread topping and chill before slicing.
