- 2 slices of bread (sourdough or whole grain)
- 2 slices of cheese (mozzarella, cheddar, or provolone)
- 2 tablespoons of pesto (store-bought or homemade)
- Butter or olive oil (for grilling)
Instructions
- Start by spreading pesto on one side of each slice of bread.
- Place a slice of cheese on the non-pesto side of one slice of the bread.
- Top it with the other slice of bread, pesto side down.
- Heat a skillet over medium heat and add a generous pat of butter or a splash of olive oil.
- Once the skillet is warm, place the sandwich in the pan.
- Cook until the bread is golden brown, about 3-4 minutes.
- Carefully flip the sandwich to cook the other side until the cheese melts and the bread is beautifully crispy.
- Remove from the skillet, slice, and serve warm.
Notes
For added flavor, consider using artisan bread or adding grated Parmesan on the cheese.
