Ingredients

  • 1 lb smoked sausage
  • 12 oz penne pasta
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 medium onion, chopped
  • 1 bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 tbsp Cajun seasoning
  • 1 tsp paprika
  • Salt and pepper, to taste
  • 1 cup grated Parmesan cheese
  • 2 tbsp olive oil

Instructions

  1. Heat oil in a large pot over medium heat.
  2. Add sausage to the pot and cook until browned, about 5-7 minutes.
  3. Toss in chopped onion and bell pepper, sauté for another 3-4 minutes.
  4. Stir in minced garlic and cook for 1 minute.
  5. Build flavor with diced tomatoes, chicken broth, heavy cream, Cajun seasoning, paprika, salt, and pepper; bring to a boil.
  6. Stir in uncooked penne pasta, lower heat and simmer for 10-12 minutes until pasta is tender.
  7. Remove from heat, stir in grated Parmesan until melted and combined.

Notes

For added creaminess, mix in cream cheese along with the heavy cream.
