Ingredients

  • 4 boneless, skinless chicken breasts
  • ¼ cup balsamic vinegar
  • 2 tablespoons olive oil
  • 1 cup cherry tomatoes, halved
  • 1 cup mozzarella cheese, sliced
  • Fresh basil leaves, to taste
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Season the chicken breasts generously with salt and pepper.
  4. Sear the chicken in the skillet until golden brown on both sides, about 5-7 minutes per side. Once done, remove the chicken and set it aside.
  5. Add the balsamic vinegar to the same skillet, scraping up brown bits from the bottom.
  6. Add the halved cherry tomatoes, cooking until they soften slightly.
  7. Return the chicken to the skillet, spooning sauce over it, then layer the mozzarella slices on top.
  8. Transfer the skillet to the oven and bake for about 20-25 minutes or until the chicken is cooked through and the cheese is melted.
  9. Garnish with fresh basil before serving.

Notes

For added flavor, consider marinating the chicken in balsamic vinegar a few hours prior to cooking.
