- 4 boneless, skinless chicken breasts
- ¼ cup balsamic vinegar
- 2 tablespoons olive oil
- 1 cup cherry tomatoes, halved
- 1 cup mozzarella cheese, sliced
- Fresh basil leaves, to taste
- Salt and pepper, to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Heat the olive oil in a large skillet over medium-high heat.
- Season the chicken breasts generously with salt and pepper.
- Sear the chicken in the skillet until golden brown on both sides, about 5-7 minutes per side. Once done, remove the chicken and set it aside.
- Add the balsamic vinegar to the same skillet, scraping up brown bits from the bottom.
- Add the halved cherry tomatoes, cooking until they soften slightly.
- Return the chicken to the skillet, spooning sauce over it, then layer the mozzarella slices on top.
- Transfer the skillet to the oven and bake for about 20-25 minutes or until the chicken is cooked through and the cheese is melted.
- Garnish with fresh basil before serving.
Notes
For added flavor, consider marinating the chicken in balsamic vinegar a few hours prior to cooking.
