- 1/3 cup melted butter
- 1 teaspoon baking soda
- A pinch of salt
- 3/4 cup sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin.
- In a mixing bowl, combine the melted butter and mashed bananas until smooth.
- Stir in the baking soda and salt to balance sweetness.
- Add in the sugar, beaten egg, and vanilla extract, mixing until everything is well combined.
- Gradually incorporate the flour, stirring gently until just blended. Don’t overmix!
- Pour the batter into each muffin cup, filling them about two-thirds full.
- Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
- Let your muffins cool for a few minutes in the pan before transferring them to a wire rack.
Notes
For a deeper flavor, substitute sugar with brown sugar or use whole wheat flour for a healthier option. Muffins can be stored in an airtight container for up to three days or frozen for up to three months.
