- 1 teaspoon sesame oil
- 3 cloves garlic, minced

- 1/2 teaspoon red pepper flakes
- 2 green onions, sliced (white and green parts separately)
- About 4 cups cooked white rice (short-grain sushi or jasmine rice works best)
- Quick pickled cucumbers (thinly sliced cucumbers soaked in 2 tablespoons rice vinegar, 1 teaspoon sugar, and a pinch of salt for 15 minutes)
- Sesame seeds (optional, toasted)
- Fried egg (optional)
- Steamed or sautéed greens (optional)
Instructions
- Prep your ingredients (5 minutes): Start by mincing your garlic, grating the ginger if you’re using it, and slicing the green onions. For the quick pickled cucumbers, toss them with rice vinegar, sugar, and salt, and set aside to soak.
- Cook the ground beef (7-8 minutes): Heat a skillet over medium-high heat. Add your ground beef, breaking it apart as it cooks until browned, about 6-7 minutes. If there’s excess fat, carefully drain it.
- Add aromatics and sauce (3 minutes): Reduce heat to medium and stir in the minced garlic, grated ginger (if using), and the white parts of the green onions. Sauté until fragrant. Now, it’s time to incorporate your soy sauce, brown sugar, sesame oil, and red pepper flakes. Let this simmer for about 2 minutes.
- Finish with green onions (30 seconds): Stir in the green parts of the green onions and taste for seasoning adjustments.
- Serve over rice (immediate): Spoon the beef mixture over your warm cooked rice, add pickled cucumbers, and if you wish, top it off with toasted sesame seeds and a fried egg for an extra touch.
