- 2 cups corn (fresh or frozen)
- 1 cup cherry tomatoes, halved
- 1 bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup cilantro, chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup lime juice
- 2 tablespoons olive oil
- Salt and pepper, to taste
Instructions
- Cook the pasta: In a large pot, boil water and salt it generously. Add the pasta and cook according to package instructions until al dente. Drain and let cool.
- Mix the veggies: In a large bowl, combine the cooked pasta, corn, cherry tomatoes, bell pepper, red onion, and cilantro.
- Make the dressing: In a separate small bowl, whisk together the lime juice, olive oil, salt, and pepper until emulsified.
- Combine: Pour the dressing over the pasta salad and toss gently to combine.
