  • 1 pound ground turkey
  • 1 bell pepper, diced (any color)
  • 1 onion, diced (yellow or white)
  • 1 cup corn (fresh or frozen)
  • 1 can black beans, drained and rinsed
  • 2 tablespoons taco seasoning (store-bought or homemade)
  • 1 cup diced tomatoes (canned or fresh)
  • Salt and pepper to taste
  • Olive oil for cooking
  • Optional toppings: avocado, shredded cheese, cilantro, lime wedges

Instructions

  1. Heat a large skillet over medium heat and add a drizzle of olive oil.
  2. Add the diced onion and bell pepper. Sauté until softened, about 4–5 minutes.
  3. Add the ground turkey to the skillet. Break it up with a wooden spoon and cook until no longer pink and starting to brown, about 6–8 minutes.
  4. Sprinkle in the taco seasoning and stir to coat the turkey evenly. Cook 1 minute to bloom the spices.
  5. Stir in the corn, drained black beans, and diced tomatoes. Mix well.
  6. Reduce the heat to medium-low and simmer for about 8–10 minutes, stirring occasionally, until everything is heated through and flavors meld.
  7. Taste and adjust with salt and pepper. Remove from heat and serve with your preferred toppings.

Notes

Use ground chicken for a milder flavor; swap pinto beans for black beans; for lower sodium, rinse canned tomatoes and use low-sodium taco seasoning. This dish can also be served over rice or cauliflower rice.
