  • 2 lbs chicken thighs, boneless and skinless
  • 1 cup cherry tomatoes, halved
  • 1 cup bell peppers, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 cup feta cheese, crumbled
  • 1 cup olives, pitted and sliced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 cups cooked quinoa or rice
  • 1/4 cup olive oil
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat the olive oil in a large skillet over medium heat. Add the diced onions and minced garlic, sauté until fragrant and translucent.
  3. Add the chicken thighs to the skillet, seasoning with salt, pepper, oregano, and thyme. Cook until browned on both sides, about 5-7 minutes.
  4. Layer the cooked quinoa or rice at the bottom of a large casserole dish.
  5. Place the browned chicken on top, followed by the halved cherry tomatoes, diced bell peppers, sliced olives, and sprinkle crumbled feta cheese over everything.
  6. Cover the dish with foil and bake for 30-35 minutes until chicken is cooked through (internal temperature should be 165°F or 74°C).
  7. Garnish with freshly chopped parsley and serve warm.

Notes

Marinate the chicken for extra flavor if you have time. Pre-cooking the quinoa or rice speeds up assembly.
