- 2 lbs chicken thighs, boneless and skinless
- 1 cup cherry tomatoes, halved
- 1 cup bell peppers, diced
- 1 onion, diced
- 3 cloves garlic, minced
- 1 cup feta cheese, crumbled
- 1 cup olives, pitted and sliced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 cups cooked quinoa or rice
- 1/4 cup olive oil
- Fresh parsley for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Heat the olive oil in a large skillet over medium heat. Add the diced onions and minced garlic, sauté until fragrant and translucent.
- Add the chicken thighs to the skillet, seasoning with salt, pepper, oregano, and thyme. Cook until browned on both sides, about 5-7 minutes.
- Layer the cooked quinoa or rice at the bottom of a large casserole dish.
- Place the browned chicken on top, followed by the halved cherry tomatoes, diced bell peppers, sliced olives, and sprinkle crumbled feta cheese over everything.
- Cover the dish with foil and bake for 30-35 minutes until chicken is cooked through (internal temperature should be 165°F or 74°C).
- Garnish with freshly chopped parsley and serve warm.
Notes
Marinate the chicken for extra flavor if you have time. Pre-cooking the quinoa or rice speeds up assembly.
