- 2 lbs chicken (breasts, thighs, or drumsticks)
- 2 tbsp Greek yogurt
- 1 tbsp olive oil
- Zest + juice of 1 lemon
- 3 cloves garlic, minced
- 1 tbsp dried oregano
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp kosher salt
- 1/2 tsp black pepper
Instructions
- Combine the Greek yogurt, olive oil, lemon juice, minced garlic, oregano, paprika, garlic powder, salt, and pepper in a small bowl or mason jar.
- Whisk or shake the mixture until all the ingredients are smoothly combined.
- Place the chicken into a large zip-top bag or shallow dish.
- Pour the marinade over the chicken and ensure it’s well-coated.
- Refrigerate for at least 30 minutes or up to 24 hours for maximum flavor.
- Cook the chicken on the grill, bake in the oven, or sauté until golden brown and reaches an internal temperature of 165°F.
Notes
For a dairy-free option, substitute Greek yogurt with coconut yogurt. Fresh herbs can replace dried herbs for a fresher taste.
