- 3 cups leftover ham, diced
- 4 cups potatoes, peeled and cubed
- 1 cup onion, diced
- 2 cups shredded cheese (preferably cheddar)
- 1 cup milk
- 1 can cream of mushroom soup
- Salt and pepper, to taste
- 1 tsp garlic powder
- 1 tsp paprika
- Bread crumbs (optional, for topping)
Instructions
- Preheat your oven to 350°F (175°C).
- Mix together the diced ham, cubed potatoes, diced onion, shredded cheese, milk, cream of mushroom soup, garlic powder, paprika, salt, and pepper in a large bowl.
- Pour the mixture into a greased baking dish and spread it evenly.
- Sprinkle bread crumbs on top for extra crunch, if desired.
- Bake in the preheated oven for 45-55 minutes until the potatoes are tender and the casserole is bubbly and golden on top.
- Let it cool for a few minutes before serving.
Notes
For a lighter version, swap potatoes with cauliflower. Can be made ahead and stored in the refrigerator for up to three days.
