- 2 salmon fillets
- 2 cups fresh spinach
- 8 ounces fettuccine or penne pasta
- 1 cup heavy cream

Instructions
- Cook the pasta: Begin by boiling water in a large pot. Add salt generously and cook the pasta according to package instructions until it’s al dente. Drain it and set aside.
- Sauté the salmon: In a large skillet, heat olive oil over medium heat. Generously season the salmon fillets with salt and pepper before placing them in the skillet. Cook for about 4-5 minutes on each side, until the salmon is beautifully browned and cooked through. Remove the fillets from the skillet and flake them into bite-sized pieces.
- Sauté garlic and spinach: In the same skillet, lower the heat slightly and add minced garlic. Sauté for about a minute until fragrant. Toss in the fresh spinach and cook until wilted.
- Create the creamy sauce: Pour in the heavy cream and stir it gently. Let it simmer for a couple of minutes, allowing it to thicken up slightly.
- Combine it all: Add the drained pasta and flaked salmon to the saucepan. Toss everything together, ensuring the pasta and salmon are evenly coated in that luxurious creamy sauce.
- Serve and enjoy: Dish it out while it’s hot and sprinkle freshly grated Parmesan on top for an added layer of flavor.
Notes
For a lighter version, consider substituting half-and-half for heavy cream. You can also use pre-cooked salmon to speed things up.
