- ½ cup pepperoncini peppers, drained (sliced, ring, or whole)
Instructions
- Prep the chicken: Cut the chicken into thin strips and season with salt and pepper.
- Brown the chicken: In a large skillet, melt the butter over medium-high heat. Add seasoned chicken strips and cook them until browned on all sides, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- Sauté aromatics: In the same skillet, add the diced onions and garlic. Sauté until they soften and turn golden brown, about 3 minutes.
- Build the sauce: Pour in the chicken stock along with the roasted red peppers. Let the mixture simmer for about 5 minutes, allowing it to reduce and concentrate in flavor.
- Create creamy goodness: Turn off the heat and slowly stir in the heavy cream and Parmesan cheese. Whisk until the sauce is smooth and well combined.
- Season to taste: Return the heat to medium and sprinkle in the Italian seasoning and pepperoncini peppers. Stir everything to incorporate the flavors.
- Combine and finish cooking: Add the browned chicken back into the pan. Let everything simmer for an extra 5 minutes, allowing the chicken to cook through fully and the sauce to thicken to your desired consistency.
- Serve and Enjoy: Plate your creamy pepperoncini chicken and serve hot over rice, pasta, or alongside a fresh salad.
