  • 1.5 pounds Yukon Gold or Russet potatoes, peeled and cut into 1-inch cubes
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon fresh rosemary (or 1/2 teaspoon dried)
  • 1 cup low sodium chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the cubed potatoes with olive oil, garlic powder, onion powder, rosemary, salt, and pepper in a large bowl.
  3. Spread the potatoes in a single layer on a baking sheet and roast for 30-40 minutes, flipping halfway through.
  4. Pat the chicken dry with paper towels.
  5. Combine Italian seasoning, paprika, salt, and pepper in a small bowl; rub on the chicken.
  6. Heat olive oil in a skillet over medium-high heat.
  7. Sear the chicken for 3-4 minutes per side until golden brown and cooked through.
  8. Add minced garlic to the skillet and sauté for 30 seconds.
  9. Pour in chicken broth and simmer, scraping the pan.
  10. Stir in heavy cream, Parmesan, and remaining garlic.
  11. Whisk together cornstarch and cold water, then add to sauce and simmer until thickened.
  12. Return chicken to skillet, spoon sauce over it.
  13. Garnish with parsley and serve over crispy potatoes.
