- 2 large boneless, skinless chicken breasts (about 1.5 pounds total)
- 2 tablespoons olive oil
- 6–8 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 1.5 pounds Yukon Gold or Russet potatoes, peeled and cut into 1-inch cubes
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 teaspoon fresh rosemary (or 1/2 teaspoon dried)
- 1 cup low sodium chicken broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1 tablespoon cornstarch
- 2 tablespoons cold water
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon lemon juice
Instructions
- Preheat your oven to 400°F (200°C).
- Toss the cubed potatoes with olive oil, garlic powder, onion powder, rosemary, salt, and pepper in a large bowl.
- Spread the potatoes in a single layer on a baking sheet and roast for 30-40 minutes, flipping halfway through.
- Pat the chicken dry with paper towels.
- Combine Italian seasoning, paprika, salt, and pepper in a small bowl; rub on the chicken.
- Heat olive oil in a skillet over medium-high heat.
- Sear the chicken for 3-4 minutes per side until golden brown and cooked through.
- Add minced garlic to the skillet and sauté for 30 seconds.
- Pour in chicken broth and simmer, scraping the pan.
- Stir in heavy cream, Parmesan, and remaining garlic.
- Whisk together cornstarch and cold water, then add to sauce and simmer until thickened.
- Return chicken to skillet, spoon sauce over it.
- Garnish with parsley and serve over crispy potatoes.
