- 2–3 cups cooked and shredded chicken
- 4 cups fresh spinach (or 1 package frozen spinach, thawed and drained)
- 8 ounces cream cheese, softened
- 1/2 cup sour cream
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Pinch of nutmeg (optional)
- Optional additions: sliced mushrooms, artichoke hearts, or cooked pasta
Instructions
- Prepare the Ingredients: Get the Chicken Ready by boiling or roasting it beforehand, then shredding it. Sauté the Spinach with a little olive oil until it wilts if using fresh spinach.
- Make the Sauce: In a medium bowl, combine the softened cream cheese, sour cream, minced garlic, chopped onion, salt, pepper, and nutmeg. Stir until well-blended and smooth.
- Preheat the Oven to 375°F (190°C).
- Layer the Chicken and Sauce: In a greased casserole dish, layer shredded chicken, sautéed spinach, and pour the creamy sauce over it. Gently mix to combine all layers.
- Sprinkle shredded mozzarella and grated Parmesan cheese evenly on top of the casserole.
- Bake uncovered for 25-30 minutes, or until the cheese is melted and the top is golden brown.
- Cool slightly before serving. Pair it with a simple salad, crusty bread, or fluffy rice for a complete meal.
Notes
For longer storage, freeze the unbaked casserole in an airtight container for up to 3 months. Bake from frozen at 375°F (190°C) for 50-60 minutes.
