Ingredients

  • 4 boneless chicken breasts
  • 1 cup black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 cup diced tomatoes with green chilies
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with salt, pepper, cumin, and chili powder.
  3. Add the seasoned chicken to the skillet. Cook until browned on both sides and cooked through, about 7-8 minutes per side.
  4. Remove the chicken from the skillet and set aside.
  5. Add black beans, corn, and diced tomatoes to the same skillet. Stir well and let simmer for about 5 minutes.
  6. Return the chicken to the skillet and sprinkle shredded cheddar cheese on top.
  7. Cover the skillet and cook until the cheese is melted and bubbly, about 2-3 minutes.
  8. Serve hot, garnished with fresh herbs if desired.
