Ingredients

- 4 boneless chicken breasts
- 1 cup black beans, drained and rinsed
- 1 cup corn (frozen or canned)
- 1 cup diced tomatoes with green chilies
- 1 tsp cumin
- 1 tsp chili powder
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Season the chicken breasts with salt, pepper, cumin, and chili powder.
- Add the seasoned chicken to the skillet. Cook until browned on both sides and cooked through, about 7-8 minutes per side.
- Remove the chicken from the skillet and set aside.
- Add black beans, corn, and diced tomatoes to the same skillet. Stir well and let simmer for about 5 minutes.
- Return the chicken to the skillet and sprinkle shredded cheddar cheese on top.
- Cover the skillet and cook until the cheese is melted and bubbly, about 2-3 minutes.
- Serve hot, garnished with fresh herbs if desired.

Use a meat thermometer to ensure chicken reaches an internal temperature of 165°F.
