- 1 lb flank steak (or skirt steak, or another cut)
- 1 tablespoon soy sauce
- 1 tablespoon peanut oil (or vegetable oil)
- 1 tablespoon cornstarch
- 1/2 teaspoon baking soda (optional)
- 1/2 cup chicken stock (or beef stock)
- 2 tablespoons Shaoxing wine (or dry sherry)
- 2 tablespoons soy sauce
- 1 teaspoon dark soy sauce
- 2 teaspoons brown sugar (or white sugar)
- 1 head broccoli (cut into bite-sized florets)
- 1 tablespoon peanut oil (or vegetable oil)
- 3 garlic cloves (minced)
- 2 teaspoons ginger (minced)
Instructions
- Prepare the beef: Slice the beef against the grain into 0.5 cm (1/4 inch) thick slices or into 1-cm (1/2 inch) sticks. In a small bowl, combine the beef slices with soy sauce, peanut oil, and cornstarch. Mix well until the beef is evenly coated. Let it marinate for about 10 minutes.
- Make the sauce: In a medium-sized bowl, whisk together the chicken stock, Shaoxing wine, soy sauce, dark soy sauce, brown sugar, and cornstarch. Set this aside.
- Steam the broccoli: In a large nonstick skillet, bring 1/4 cup of water to a boil over medium-high heat. Add the broccoli and cover the skillet. Steam for about 1 minute until the broccoli turns bright green and tender, then transfer it to a plate.
- Cook the beef: Wipe out any remaining water from the skillet. Heat 1 tablespoon of oil over medium-high heat, swirling to coat the skillet. Spread the marinated beef in a single layer and let it cook without stirring for about 30 seconds. Flip the beef to the other side and cook briefly until it is lightly charred but still pink inside.
- Add aromatics: Add the minced garlic and ginger to the skillet, stirring a few times to release their fragrance.
- Combine everything: Return the broccoli to the skillet. Stir the sauce again to dissolve the cornstarch completely before pouring it over the beef and broccoli. Cook while stirring until the sauce thickens, which should take about 1 minute.
- Serve: Transfer everything to a plate immediately and enjoy hot as a main dish.
Notes
Serve with jasmine rice or noodles. Garnish with sesame seeds or green onions for added flavor.
