- 2 slices of bread (your choice—sourdough, whole wheat, or gluten-free)
- 1 cup of cooked chicken, shredded
- 1 ripe avocado, mashed
- 1 cup of shredded cheese (cheddar or mozzarella)
- 1 tablespoon of mayonnaise (optional)
- Salt and pepper to taste
- Butter for grilling
Instructions
- Preheat a skillet or pan over medium heat.
- Combine the shredded chicken, mashed avocado, mayonnaise (if using), salt, and pepper in a bowl. Mix until well incorporated.
- Spread butter on one side of each slice of bread.
- Place one slice of bread butter-side down in the skillet.
- Spread a generous amount of the chicken and avocado mixture on top, followed by a sprinkle of shredded cheese.
- Top with the second slice of bread, butter-side up.
- Grill the sandwich for about 3-4 minutes on each side, or until golden brown and the cheese is melted.
- Remove from heat, slice in half, and serve immediately while warm.
