Ingredients

  • 30 oz frozen hash browns
  • 1 can cream of chicken soup (or cream of mushroom for vegetarian)
  • 1 cup sour cream
  • 3 cups shredded cheese (sharp cheddar recommended)
  • 1/2 cup butter, melted
  • 1/2 cup onion flakes (or diced onion)
  • 1 cup cornflakes or breadcrumbs

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the hash browns, cream of chicken soup, sour cream, 2 cups of shredded cheese, butter, and onion flakes in a large mixing bowl. Mix well.
  3. Transfer the mixture into a greased 9×13-inch baking dish.
  4. Mix the remaining cheese and crushed cornflakes (or breadcrumbs) in a separate bowl and sprinkle evenly over the potato mixture.
  5. Bake for about 45-60 minutes, until the top is golden brown and edges are bubbling.
