Indulgent cheesy beef-filled biscuit bombs that are quick to prepare, making them perfect for busy weeknights or game days.

- 1 pound ground beef (80/20)
- 1 cup shredded cheddar cheese
- 1/2 cup cream cheese, softened
- 1 can refrigerated biscuit dough (8-count)
- 1/4 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon black pepper
- 1 tablespoon melted butter (for brushing the tops)
Instructions
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Heat a large skillet over medium heat. Add the ground beef and break it apart. Cook until fully browned, about 6–8 minutes.
- Drain excess fat from the skillet, return the beef to the pan, then stir in garlic powder, onion powder, and black pepper. Cook for 1–2 more minutes until fragrant. Remove from heat and let the beef cool.
- In a mixing bowl, beat the softened cream cheese until smooth. Add shredded cheddar and grated Parmesan, then fold in the cooled beef until evenly combined.
- Open the can of biscuit dough and separate the biscuits. Flatten each biscuit into a 3–4 inch round.
- Spoon about 2 tablespoons of the beef-and-cheese mixture into the center of each disc. Pull the edges of the biscuit up and pinch firmly to seal into a ball.
- Place each sealed biscuit bomb on the prepared baking sheet, spacing them evenly. Brush the tops with melted butter.
- Bake for 12–15 minutes, or until the biscuits are golden brown. Remove from oven and let cool for 3–5 minutes before serving.
Notes
For a milder taste, use mild cheddar. Can be made vegetarian by substituting crumbled tempeh or plant-based ground ‘beef’.
