- 4 boneless chicken breasts
- 1 cup brown sugar
- 1 cup pineapple chunks (fresh or canned)
- 1/4 cup soy sauce
- 1/4 cup vinegar (apple cider or rice vinegar)
- 2 cloves garlic, minced
- Salt and pepper, to taste
- Olive oil for cooking
- Chopped green onions for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Combine the brown sugar, soy sauce, vinegar, minced garlic, salt, and pepper in a mixing bowl to create the marinade.
- Heat olive oil in a skillet over medium heat.
- Season the chicken breasts generously with salt and pepper. Next, sear each piece in the skillet for about 4-5 minutes per side until they are golden brown.
- Transfer the chicken to a baking dish and pour the brown sugar mixture evenly over the top.
- Add the pineapple chunks around the chicken in the dish.
- Cover with foil and bake for approximately 25-30 minutes or until the chicken is cooked through (internal temperature should reach 165°F or 74°C).
- Let it rest for a few minutes after removing from the oven. Garnish with chopped green onions before serving.
Notes
Serve with coconut rice or steamed vegetables for a complete meal. Leftovers can be refrigerated for up to 3 days or frozen for up to 3 months.
