  • Olive oil for cooking
  • Chopped green onions for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the brown sugar, soy sauce, vinegar, minced garlic, salt, and pepper in a mixing bowl to create the marinade.
  3. Heat olive oil in a skillet over medium heat.
  4. Season the chicken breasts generously with salt and pepper. Next, sear each piece in the skillet for about 4-5 minutes per side until they are golden brown.
  5. Transfer the chicken to a baking dish and pour the brown sugar mixture evenly over the top.
  6. Add the pineapple chunks around the chicken in the dish.
  7. Cover with foil and bake for approximately 25-30 minutes or until the chicken is cooked through (internal temperature should reach 165°F or 74°C).
  8. Let it rest for a few minutes after removing from the oven. Garnish with chopped green onions before serving.
