- 2 cups cooked rice (cold, preferably day-old for better texture)
- 1 cup diced chicken (cooked, shredded, or leftover)
- 2 eggs, beaten
- 1 cup mixed vegetables (peas, carrots, and bell peppers)
- 2 tablespoons vegetable oil
- 1/4 cup green onions, chopped (for garnish)
- 1/4 cup bang bang sauce (mayonnaise, sweet chili sauce, and sriracha)
- Salt and pepper to taste
Instructions
- Heat the oil in a large skillet over medium heat.
- Add the diced chicken to the pan and cook until browned and fully cooked, about 5-7 minutes.
- Push the chicken to one side of the pan, and pour in the beaten eggs, scrambling until fully cooked.
- Incorporate the mixed vegetables and stir-fry for 2-3 minutes.
- Add the cooked rice, breaking up any clumps, and mix everything together.
- Pour in the bang bang sauce, stirring to combine.
- Season with salt and pepper to taste.
- Garnish with chopped green onions and serve hot.
Notes
Use cold, day-old rice for the best texture and don’t overcrowd the pan when cooking.
