Description

A quick and flavorful fried rice dish featuring chicken, vibrant vegetables, and a zesty bang bang sauce.

Ingredients

Scale
  • 2 cups cooked rice (cold, preferably day-old for better texture)
  • 1 cup diced chicken (cooked, shredded, or leftover)
  • 2 eggs, beaten
  • 1 cup mixed vegetables (peas, carrots, and bell peppers)
  • 2 tablespoons vegetable oil
  • 1/4 cup green onions, chopped (for garnish)
  • 1/4 cup bang bang sauce (mayonnaise, sweet chili sauce, and sriracha)
  • Salt and pepper to taste

Instructions

  1. Heat the oil in a large skillet over medium heat.
  2. Add the diced chicken to the pan and cook until browned and fully cooked, about 5-7 minutes.
  3. Push the chicken to one side of the pan, and pour in the beaten eggs, scrambling until fully cooked.
  4. Incorporate the mixed vegetables and stir-fry for 2-3 minutes.
  5. Add the cooked rice, breaking up any clumps, and mix everything together.
  6. Pour in the bang bang sauce, stirring to combine.
  7. Season with salt and pepper to taste.
  8. Garnish with chopped green onions and serve hot.

Notes

Use cold, day-old rice for the best texture and don’t overcrowd the pan when cooking.
