A hearty and delicious white chicken chili that warms you up on chilly days, packed with protein and flavor.
Ingredients

- 1 lb chicken breast, cooked and shredded
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes with green chilies
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 cup cream or half-and-half
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, heat some oil over medium heat and sauté the chopped onion until translucent.
- Add minced garlic and cook for an additional minute.
- Stir in the shredded chicken, white beans, diced tomatoes, cumin, chili powder, chicken broth, salt, and pepper.
- Bring the mixture to a simmer and cook for about 15 minutes.
- Lower the heat and stir in the cream.
- Cook for another 5 minutes until heated through.
- Serve hot, garnished with fresh cilantro.
Notes
For extra flavor, consider using rotisserie chicken. Adjust spice levels by adding more or less chili powder. Add more vegetables for extra texture.
