Ingredients

  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup cream or half-and-half
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat some oil over medium heat and sauté the chopped onion until translucent.
  2. Add minced garlic and cook for an additional minute.
  3. Stir in the shredded chicken, white beans, diced tomatoes, cumin, chili powder, chicken broth, salt, and pepper.
  4. Bring the mixture to a simmer and cook for about 15 minutes.
  5. Lower the heat and stir in the cream.
  6. Cook for another 5 minutes until heated through.
  7. Serve hot, garnished with fresh cilantro.

Notes

For extra flavor, consider using rotisserie chicken. Adjust spice levels by adding more or less chili powder. Add more vegetables for extra texture.
