  • 2 large eggs, room temperature
  • ½ cup (113 grams) unsalted butter, melted
  • 1 teaspoon vanilla extract (optional)
  • ½ teaspoon ground cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan with butter or non-stick spray, and line it with parchment paper if desired.
  2. In a large mixing bowl, mash the bananas until smooth, leaving a few small lumps for texture (about 1 to 2 minutes).
  3. Add the sugar and eggs to the mashed bananas. Mix well until combined and fluffy (roughly 2 minutes).
  4. Pour in the slightly cooled melted butter and vanilla extract (if using). Stir gently until just combined.
  5. In a separate bowl, sift the flour and cinnamon (if using) together.
  6. Gradually fold the dry ingredients into the wet mixture using a spatula. Mix just until combined; avoid overmixing.
  7. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  8. Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean. Begin checking around the 50-minute mark.
