- 3 medium ripe bananas, mashed
- 1 ½ cups (190 grams) all-purpose flour
- ¾ cup (150 grams) granulated sugar
- 2 large eggs, room temperature
- ½ cup (113 grams) unsalted butter, melted
- 1 teaspoon vanilla extract (optional)
- ½ teaspoon ground cinnamon (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan with butter or non-stick spray, and line it with parchment paper if desired.
- In a large mixing bowl, mash the bananas until smooth, leaving a few small lumps for texture (about 1 to 2 minutes).
- Add the sugar and eggs to the mashed bananas. Mix well until combined and fluffy (roughly 2 minutes).
- Pour in the slightly cooled melted butter and vanilla extract (if using). Stir gently until just combined.
- In a separate bowl, sift the flour and cinnamon (if using) together.
- Gradually fold the dry ingredients into the wet mixture using a spatula. Mix just until combined; avoid overmixing.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean. Begin checking around the 50-minute mark.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Store leftovers wrapped tightly for up to three days at room temperature or a week in the fridge. For longer storage, slice and freeze for up to three months.
