Ingredients

  • 1 lb pasta shells
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 2 cups shredded cheddar cheese
  • 1 can (14.5 oz) diced tomatoes (undrained)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 3 cups beef broth
  • ½ cup sour cream
  • 23 green onions, chopped, for garnish
  • Salt and pepper to taste

Instructions

  1. Heat a large pot or deep skillet over medium heat. Add ground beef and cook until browned.
  2. Add diced onion and minced garlic; sauté until translucent.
  3. Stir in taco seasoning, diced tomatoes, and beef broth; bring to a boil.
  4. Add pasta shells, reduce heat, cover, and simmer until pasta is tender.
  5. Stir in cheddar cheese until melted, then mix in sour cream until smooth.
  6. Garnish with green onions and serve.

Notes

For a lighter version, substitute ground turkey and use reduced-fat cheese. Adjust spices for desired heat level.
