- 1 cup mango puree
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- Salt and pepper to taste
- Sesame seeds and chopped green onions for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Mix together the mango puree, soy sauce, honey, sesame oil, minced garlic, grated ginger, salt, and pepper to create the marinade.
- Place the chicken breasts into the bowl and coat them thoroughly in the marinade. Let them marinate for at least 30 minutes (or longer for more flavor).
- If baking, arrange the marinated chicken on a baking sheet lined with parchment paper. Bake for 25-30 minutes, or until cooked through and reaches an internal temperature of 165°F (74°C).
- Alternatively, for a skillet-seared version, heat a pan over medium heat and cook the chicken for about 6-7 minutes on each side until golden brown and fully cooked.
- Garnish the chicken with sesame seeds and chopped green onions before serving. Serve with a side of rice or noodles.
Notes
For deeper flavor, marinate the chicken overnight. Suitable for various proteins; can be made vegetarian by substituting chicken with tofu or tempeh.
