Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple chunks (fresh or canned)
  • 1/2 cup soy sauce
  • 1/2 cup brown sugar
  • 1/4 cup ketchup
  • 1/4 cup apple cider vinegar
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. In a mixing bowl, combine the soy sauce, brown sugar, ketchup, apple cider vinegar, minced garlic, and minced ginger until well blended.
  2. Place the chicken breasts at the bottom of your crock pot and pour the sauce evenly over them.
  3. Scatter the pineapple chunks on top of the chicken.
  4. Cover and cook on low for 6-7 hours or high for 3-4 hours until the chicken is tender.
  5. Shred the chicken with two forks in the pot and stir into the sauce.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with chopped green onions.
