- 4 boneless, skinless chicken breasts
- 1 cup pineapple chunks (fresh or canned)
- 1/2 cup soy sauce
- 1/2 cup brown sugar
- 1/4 cup ketchup
- 1/4 cup apple cider vinegar
- 1 tablespoon minced garlic
- 1 tablespoon minced ginger
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- In a mixing bowl, combine the soy sauce, brown sugar, ketchup, apple cider vinegar, minced garlic, and minced ginger until well blended.
- Place the chicken breasts at the bottom of your crock pot and pour the sauce evenly over them.
- Scatter the pineapple chunks on top of the chicken.
- Cover and cook on low for 6-7 hours or high for 3-4 hours until the chicken is tender.
- Shred the chicken with two forks in the pot and stir into the sauce.
- Season with salt and pepper to taste.
- Serve hot, garnished with chopped green onions.
Notes
For a thicker sauce, add a cornstarch slurry during the last 30 minutes of cooking. Marinating the chicken overnight enhances flavor.
