Description

Sweet and Sour Pineapple Chicken is a delightful dish that combines savory and sweet flavors, perfect for family dinners or quick weeknight meals.

Ingredients

Scale
  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 cup bell peppers, chopped (mixed colors)
  • 1 cup pineapple chunks (canned or fresh)
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup soy sauce
  • 1/4 cup sugar (or honey)
  • 1/4 cup vinegar (rice or white)
  • 1 tablespoon cornstarch (optional, for thickening)
  • Salt and pepper to taste
  • Oil for cooking

Instructions

  1. Heat oil in a large skillet or wok over medium-high heat.
  2. Add the chicken pieces and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes.
  3. Add the onion and garlic, and sauté for another 2-3 minutes until translucent.
  4. Stir in the bell peppers and pineapple chunks, and cook for an additional 2-3 minutes.
  5. In a separate bowl, whisk together soy sauce, sugar, vinegar, and cornstarch (if using).
  6. Pour the sauce over the chicken and vegetables and stir well to combine.
  7. Cook for another 2-5 minutes until the sauce thickens slightly.
  8. Serve hot over rice or noodles.

Notes

Adjust the sweetness by adding more or less sugar or honey to the sauce. For extra crunch, add water chestnuts or cashews. Using fresh pineapple can enhance the flavor, but canned works well for convenience.
