  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon cumin

  • 1/4 teaspoon black pepper
  • 1/2 cup sour cream or Greek yogurt
  • Juice of 1 lime
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt (for crema)

Instructions

  1. Heat a skillet over medium-high heat. Add the olive oil, then the corn. Sauté the corn for 3–4 minutes until it starts to char. Sprinkle in chili powder, smoked paprika, cumin, salt, and pepper, and toss to coat. Remove the corn to a bowl.
  2. Combine sour cream (or Greek yogurt), lime juice, garlic powder, and 1/4 teaspoon salt in a small bowl. Taste and add more lime if desired.
  3. Briefly warm the black beans in the same pan for a minute.
  4. Thinly slice the grilled chicken breasts.
  5. Divide the cooked rice between bowls. Top with sliced chicken, charred corn, black beans, diced tomatoes, red onion, sprinkle cotija cheese, and chopped cilantro.
  6. Drizzle lime crema over each bowl and serve immediately.

Notes

For a vegetarian option, swap the chicken for extra black beans or crumbled tempeh. Use Greek yogurt for a lighter crema. Store components separately for meal prep.
