- 2 tablespoons smoky seasoning (paprika, cumin, or spice blend)
- 1 cup creamy sauce (sour cream, Greek yogurt, or dressing)
- Salt and pepper, to taste
- 1 lime, optional
- Fresh cilantro, for garnish
Instructions
- Season the chicken thighs with smoky seasoning, salt, and pepper, and let it meld for 10 minutes.
- Cook the chicken in a skillet over medium heat with oil for 6-7 minutes on each side until juices run clear.
- Char the corn in the same skillet or grill for about 5-6 minutes.
- Prepare the rice according to package instructions.
- Mix in a large bowl the cooked rice, sliced chicken, charred corn, and creamy sauce.
- Finish by squeezing fresh lime juice and garnishing with cilantro before serving warm.
