Ingredients

  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 3 tablespoons honey
  • 4 cloves garlic, minced
  • 1 teaspoon fresh grated ginger
  • 1/2 teaspoon red chili flakes (optional)
  • 2 tablespoons cornstarch
  • 2 tablespoons vegetable oil
  • 8 oz noodles (rice noodles or egg noodles)
  • 2 green onions, chopped
  • 1 teaspoon sesame seeds (optional)

Instructions

  1. Bring a medium pot of salted water to a rolling boil. Cook the noodles per package directions until al dente. Drain well, toss with a little oil, and set aside.
  2. Toss the chicken with cornstarch until evenly coated.
  3. Heat vegetable oil in a large skillet over medium-high heat. Cook the chicken until golden and cooked through. Transfer chicken to a plate.
  4. Add minced garlic and grated ginger to the skillet. Sauté for 30–60 seconds.
  5. Stir in soy sauce, honey, and red chili flakes. Let bubble for 2–3 minutes until slightly thickened.
  6. Return the cooked chicken to the skillet and toss to coat.
  7. Add the cooked noodles and toss thoroughly until warmed through and coated with sauce.
  8. Serve hot, garnished with chopped green onions and sesame seeds.

Notes

For a gluten-free version, use tamari and rice noodles. Adjust sweetness by reducing honey and adding a splash of rice vinegar.
