  • For the toffee sauce:
  • 8 tbsp butter
  • ¾ cup brown sugar
  • ¾ cup heavy cream
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 or 9×11 inch baking dish with nonstick spray.
  2. Cream together the granulated sugar, brown sugar, and softened butter until light and airy.
  3. Add in the eggs, vanilla extract, buttermilk, maple syrup, and mashed bananas, blending until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, kosher salt, and ground cinnamon.
  5. Gradually mix the dry ingredients into the wet mixture until just combined, ensuring not to overmix.
  6. Pour the batter into the prepared baking dish and bake for about 45-55 minutes, or until a toothpick inserted in the center comes out clean.
