- 4 Bell Peppers (any color)
- 1 tablespoon Olive Oil
- 2 cups Shredded Chicken
- 1/2 cup Buffalo Sauce
- 1/4 cup Dairy-Free Ranch Dressing
- 1/4 cup Fresh Herbs (like parsley or green onion)
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare the Peppers: Slice the tops off the bell peppers and remove the seeds. Drizzle a baking dish with olive oil to prevent sticking.
- Mix the Filling: In a large bowl, combine the shredded chicken, Buffalo sauce, and ranch dressing until everything is well coated.
- Stuff the Peppers: Arrange the hollowed peppers in the baking dish. Generously fill each pepper with the chicken mixture, pressing it down to pack it tightly.
- Bake: Cover the dish with aluminum foil and bake for 25 minutes. After this time, remove the foil and continue baking for an additional 10 minutes until the peppers are tender and golden on top.
- Garnish: Once they’re out of the oven, sprinkle your selected fresh herbs on top before serving.
Notes
Store leftovers in an airtight container in the refrigerator for 3–4 days or freeze for up to 3 months. For reheating, microwave for 2–3 minutes or bake at 350°F (175°C) for 10–15 minutes.
