Smashburger Quesadillas combine the best flavors of a classic burger and a beloved Mexican dish into a crispy and satisfying meal.


Ingredients

  • 2 large tortillas
  • 1 cup cooked ground beef
  • 1 cup shredded cheese (cheddar or American)
  • 1/4 cup diced onions
  • 1/4 cup diced tomatoes
  • 1/4 cup pickles
  • 1 tablespoon ketchup
  • 1 tablespoon mustard
  • Cooking oil for frying

Instructions

  1. Heat a skillet over medium heat and add a drizzle of cooking oil.
  2. Place one tortilla in the skillet, then sprinkle half of the cheese on top.
  3. Add the cooked ground beef, diced onions, tomatoes, pickles, ketchup, and mustard on top of the cheese.
  4. Layer the remaining cheese and carefully place the second tortilla on top.
  5. Cook for 3-4 minutes until the bottom tortilla is golden and crispy.
  6. Flip carefully and cook the other side for another 3-4 minutes.
  7. Remove from the skillet and let the quesadilla cool for about a minute before slicing it into wedges.
  8. Serve warm with your favorite dipping sauces like ranch or salsa.

Notes

For a lighter version, switch the ground beef for grilled chicken or turkey. Consider adding sautéed mushrooms or jalapeños for extra flavor.
