Ingredients

Scale
  • 1 cup chopped corned beef
  • 1 cup drained sauerkraut
  • 1 cup shredded Swiss cheese
  • 4 oz cream cheese, softened
  • 1 cup rye breadcrumbs
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • Vegetable oil for frying or spray for air frying
  • 0.5 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon prepared horseradish
  • 1 teaspoon hot sauce
  • 1 tablespoon sweet relish
  • 0.25 teaspoon smoked paprika
  • Pinch of salt

Instructions

  1. Mix the chopped corned beef, drained sauerkraut, shredded Swiss cheese, softened cream cheese, garlic powder, onion powder, salt, and pepper in a large mixing bowl.
  2. Shape the mixture into walnut-sized balls and chill in the refrigerator for at least 30 minutes.
  3. Prepare your breading station with flour, beaten eggs, and rye breadcrumbs.
  4. Dredge each ball in flour, then dip in the egg, and roll in the rye breadcrumbs.
  5. Heat vegetable oil in a skillet to 350°F (175°C) and fry the balls for 3-4 minutes until golden brown or air fry at 400°F (200°C) for about 10 minutes, turning halfway.
  6. Mix the mayonnaise, ketchup, horseradish, hot sauce, relish, smoked paprika, and salt in a small bowl for the dipping sauce.

Notes

Chill the mixture to help it hold shape when cooking. Use high-quality corned beef for the best flavor.
