- 1 cup chopped corned beef
- 1 cup drained sauerkraut
- 1 cup shredded Swiss cheese
- 4 oz cream cheese, softened
- 1 cup rye breadcrumbs
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- Vegetable oil for frying or spray for air frying
- 0.5 cup mayonnaise
- 2 tablespoons ketchup
- 1 tablespoon prepared horseradish
- 1 teaspoon hot sauce
- 1 tablespoon sweet relish
- 0.25 teaspoon smoked paprika
- Pinch of salt
Instructions
- Mix the chopped corned beef, drained sauerkraut, shredded Swiss cheese, softened cream cheese, garlic powder, onion powder, salt, and pepper in a large mixing bowl.
- Shape the mixture into walnut-sized balls and chill in the refrigerator for at least 30 minutes.
- Prepare your breading station with flour, beaten eggs, and rye breadcrumbs.
- Dredge each ball in flour, then dip in the egg, and roll in the rye breadcrumbs.
- Heat vegetable oil in a skillet to 350°F (175°C) and fry the balls for 3-4 minutes until golden brown or air fry at 400°F (200°C) for about 10 minutes, turning halfway.
- Mix the mayonnaise, ketchup, horseradish, hot sauce, relish, smoked paprika, and salt in a small bowl for the dipping sauce.
Notes
Chill the mixture to help it hold shape when cooking. Use high-quality corned beef for the best flavor.
