- 4 rainbow carrots julienned
- 1 cup shredded red cabbage
- 1 yellow carrot or bell pepper thinly sliced
- 2 green onions sliced
- 1/4 cup chopped cilantro
- 2 tablespoons chopped mint
- 1 tablespoon sesame seeds
- 2 tablespoons rice vinegar
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon honey
- 1 teaspoon grated ginger
- 1 clove garlic minced
Instructions
- 1. Peel carrots and slice into thin matchsticks
- 2. Thinly shred cabbage and slice bell pepper or yellow carrot
- 3. Slice green onions and chop cilantro and mint
- 4. In bowl whisk rice vinegar soy sauce sesame oil honey ginger and garlic
- 5. Combine carrots cabbage onions and herbs in large bowl
- 6. Pour sesame dressing over vegetables
- 7. Toss salad until evenly coated
- 8. Sprinkle sesame seeds over the salad
- 9. Serve immediately or chill for 10 minutes before serving

- Toast sesame seeds for extra flavor
