- 12 ounces Smoked Sausage
- 1 cup Long-Grain White Rice
- 1 Yellow Onion
- 1–2 Bell Peppers
- 2 cloves Garlic
- 3 cups Low-Sodium Chicken Broth
- 1 tablespoon Olive Oil
- 1 teaspoon Paprika
- 1 tablespoon Cajun Seasoning
- 1 Fresh Parsley
Instructions
- Dice the onion and bell peppers. Mince the garlic. Slice the smoked sausage into 1/2-inch pieces.
- Heat the oil in a large, heavy skillet or Dutch oven over medium-high heat.
- Brown the sausage in a single layer for 3–4 minutes, turning to develop color. Remove and set aside.
- Add the onion and bell peppers to the pan. Sauté for 4–5 minutes until softened and slightly translucent.
- Stir in the garlic, paprika, and Cajun seasoning for about 30 seconds until fragrant.
- Add the rice and toss to coat the grains in the oil and spices for 1–2 minutes.
- Return the sausage to the pan. Pour in the chicken broth, scrape up any browned bits, and stir once to distribute.
- Bring to a simmer, then reduce heat to low, cover tightly, and cook for 18–20 minutes without lifting the lid.
- Remove from heat and let rest, covered, for 5–7 minutes. Fluff with a fork and stir in chopped parsley before serving.
Notes
To adjust for different preferences, you can swap proteins or vegetables, and for a creamier version, add cheese at the end.
