Description
This quick one-pot chicken spaghetti is a comforting weeknight dinner that can be made in under 30 minutes using pantry staples.

- 8 ounces spaghetti (break in half if needed to fit the pot)
- 1 pound chicken breast, diced (about 2 small breasts)
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 (14.5 oz) can diced tomatoes (undrained)
- 2 cups chicken broth
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and garlic. Sauté until the onion is soft and translucent, about 3–4 minutes.
- Add the diced chicken to the pot. Cook, stirring occasionally, until the pieces are no longer pink on the outside, about 4–6 minutes.
- Pour in the diced tomatoes (with juices), chicken broth, Italian seasoning, and a pinch of salt and pepper. Stir to combine.
- Bring the liquid to a rolling boil. Add the spaghetti, pushing it down so it’s mostly submerged. Break strands as needed to fit.
- Reduce heat to a simmer. Cook, stirring every few minutes to prevent sticking, until the spaghetti is tender and the liquid has reduced to a saucy consistency, about 10–12 minutes.
- Taste and adjust seasoning. Serve hot, topped with grated Parmesan cheese.
Notes
Use rotisserie chicken for a quicker preparation. Reserve half a can of tomatoes for a chunkier texture if desired.
