Instructions
- Preheat your oven to 350°F (175°C).
- Cream the softened butter and sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Whisk together the flour, baking soda, and salt in another bowl.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Line a baking sheet with parchment paper. Arrange the pineapple rings and sprinkle sugar on top.
- Drop spoonfuls of cookie dough over the pineapple rings, gently pressing them down.
