- 1 can pineapple chunks, drained
- 1 cup rice (white or brown)
- 2 cups chicken broth
- 1 bell pepper, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- Salt and pepper to taste
- Olive oil
- Chopped green onions for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the diced onion, bell pepper, and minced garlic. Sauté until the vegetables are softened.
- Introduce the chicken pieces to the skillet and cook until they are nicely browned.
- Stir in the rice, chicken broth, pineapple chunks, and soy sauce. Season with salt and pepper to taste.
- Bring the mixture to a boil. Then, cover and reduce the heat to low.
- Let it cook for about 20 minutes, or until the rice is tender and the chicken is thoroughly cooked.
- Fluff the rice with a fork, garnish with chopped green onions, and serve warm.
Notes
For a vegetarian version, swap chicken for tofu and use vegetable broth. Feel free to add vegetables like snow peas or carrots.
