Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
- In a large bowl, combine the flour, sugar, baking soda, and salt.
- In another bowl, whisk together the drained crushed pineapple, vegetable oil, eggs, and vanilla extract until well blended.
- Pour the wet ingredients into the dry mix and stir gently until just combined. If you’re adding nuts, fold them in at this stage.
- Transfer the batter into your prepared loaf pan, smoothing the top evenly.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
