Description
This easy weeknight sheet pan dinner features juicy, breadcrumb-topped chicken, golden roasted potatoes, and crisp-tender green beans, all cooked on one tray.

- 1 1/2 lb chicken breast (about 3–4 pieces), ~1 inch thick
- 2 Tbsp olive oil (for chicken)
- 2 garlic cloves, minced (for chicken)
- 1/3 cup grated Parmesan (divided)
- 1/3 cup breadcrumbs (Italian or plain)
- 1/2 tsp cracked pepper
- 1/2–3/4 tsp sea salt (adjust to taste)
- 2 lb red potatoes, cut into bite-sized pieces
- 1–2 garlic cloves, minced (for potatoes)
- 2 Tbsp olive oil (for potatoes)
- 2 Tbsp grated Parmesan (for potatoes)
- Salt and pepper, to taste (for potatoes)
- 1 lb fresh green beans, ends trimmed
- 1 Tbsp olive oil (for green beans)
- 1 garlic clove, minced (for green beans)
- 1 Tbsp Parmesan (optional, for green beans)
- Salt and pepper, to taste (for green beans)
Instructions
- Preheat the oven to 425°F. Line a large sheet pan with parchment or spray with cooking oil.
- Toss potatoes with olive oil, minced garlic, 2 Tbsp Parmesan, salt, and pepper. Spread on one side of the sheet pan and roast for 10–15 minutes.
- While potatoes roast, mix 2 Tbsp olive oil, 2 minced garlic cloves, 1/3 cup Parmesan, 1/3 cup breadcrumbs, 1/2 tsp cracked pepper, and 1/2–3/4 tsp sea salt in a bowl. Coat the chicken with the mixture.
- After 10–15 minutes of roasting, remove the sheet pan and place the coated chicken on the pan.
- Toss green beans with 1 Tbsp olive oil, 1 minced garlic clove, optional Parmesan, salt, and pepper.
- After 12–15 minutes, add the green beans to the sheet pan and roast together for another 10–15 minutes until chicken reaches 165°F.
- Optional: Broil on high for 4–5 minutes for extra crispiness, watching closely.
- Let rest for a few minutes before serving.
Notes
To make gluten-free, use gluten-free panko. For dairy-free, substitute Parmesan with nutritional yeast.
