  • 12 oz penne pasta
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 medium onion, chopped
  • 1 bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 tbsp Cajun seasoning
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 cup grated Parmesan cheese for garnish
  • 2 tbsp olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the sliced sausage, onion, and bell pepper. Sauté for about 5-7 minutes, until browned.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Mix in the diced tomatoes, chicken broth, heavy cream, Cajun seasoning, paprika, salt, and pepper. Bring the mixture to a boil.
  5. Stir in the uncooked penne pasta. Lower the heat and simmer for 10-12 minutes, stirring occasionally until the pasta is tender.
  6. Remove from heat and fold in the grated Parmesan cheese until melted.
