Instructions

  1. Preheat your oven to 400°F (200°C) or heat a large skillet over medium heat.
  2. In a large bowl, combine diced potatoes, sliced kielbasa, chopped bell pepper, and chopped onion. Drizzle with olive oil.
  3. Season with salt, pepper, garlic powder, and paprika. Toss until every piece is lightly coated.
  4. For oven method: Spread the mixture in a single layer on a rimmed baking sheet. Roast for 25–30 minutes, stirring once halfway through, until the potatoes are tender and golden.
  5. For stovetop method: Add the mixture to the hot skillet in a single layer. Cook for 20–25 minutes, stirring every 4–6 minutes, until the potatoes are fork-tender and the kielbasa and vegetables have browned.
