- 4 boneless, skinless chicken breasts
- 1/2 cup balsamic vinegar
- 1 cup cherry tomatoes, halved
- 1 cup mozzarella cheese, shredded
- 1/4 cup fresh basil, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Heat olive oil in a large skillet over medium heat until shimmering.
- Season the chicken breasts with salt and pepper and add them to the skillet, browning on both sides (about 5 minutes).
- Pour balsamic vinegar over the chicken and bring to a gentle simmer.
- Carefully add halved cherry tomatoes around the chicken, keeping them out of the sauce.
- Transfer the skillet to your preheated oven and bake for 20 minutes or until fully cooked.
- In the last 5 minutes, sprinkle shredded mozzarella over the chicken and let it melt.
- Remove from the oven and finish with a sprinkle of fresh basil before serving.
Notes
For a richer flavor, substitute chicken thighs for chicken breasts or use goat cheese instead of mozzarella for a tangy twist.
