Ingredients

  • 1 lb chicken breasts, cut into pieces
  • 1/2 cup honey
  • 1/2 cup BBQ sauce
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional: chopped green onions for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat the olive oil over medium-high heat in a large oven-safe pan.
  3. Season the chicken pieces with salt and pepper. Add them to the pan and sear until golden brown on all sides.
  4. Mix together the honey and BBQ sauce in a separate bowl. Pour it over the chicken, ensuring it’s nicely coated.
  5. Add the rice and chicken broth to the pan and gently stir everything together.
  6. Bring this mixture to a rapid boil, then cover the pan tightly with a lid or aluminum foil.
  7. Transfer the pan to the oven and bake for 25-30 minutes, or until the rice is tender and has absorbed the liquid.
  8. Let it sit for a few minutes after removing from the oven. Garnish with chopped green onions if desired, then serve hot.
