- 2 cups rice
- 1 lb chicken breasts, cut into pieces
- 1/2 cup honey
- 1/2 cup BBQ sauce
- 1 cup chicken broth
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional: chopped green onions for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Heat the olive oil over medium-high heat in a large oven-safe pan.
- Season the chicken pieces with salt and pepper. Add them to the pan and sear until golden brown on all sides.
- Mix together the honey and BBQ sauce in a separate bowl. Pour it over the chicken, ensuring it’s nicely coated.
- Add the rice and chicken broth to the pan and gently stir everything together.
- Bring this mixture to a rapid boil, then cover the pan tightly with a lid or aluminum foil.
- Transfer the pan to the oven and bake for 25-30 minutes, or until the rice is tender and has absorbed the liquid.
- Let it sit for a few minutes after removing from the oven. Garnish with chopped green onions if desired, then serve hot.
Notes
Store leftovers in an airtight container for 3-4 days in the fridge, or freeze for up to 3 months.
