- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 8 oz egg noodles
- 4 tbsp real butter
- 4 cloves garlic, minced
- 2 cups low-sodium chicken broth
- ¼ cup fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Prep your ingredients by chopping the garlic and any additional vegetables you want to add, like broccoli or bell peppers.
- Sear the chicken by heating 1 tablespoon of butter in a large skillet over medium-high heat. Add the chicken breasts, seasoning them with salt and pepper. Cook until each side is golden brown—about 5 minutes per side.
- Sauté the garlic after the chicken is browned, adding the minced garlic to the pan. Sauté for about a minute until fragrant.
- Add the chicken broth and pour it into the mixture, bringing it to a boil.
- Cook the noodles by stirring in the egg noodles and lowering the heat to a simmer. Cook for 8-10 minutes, or until the noodles are al dente.
- Finish and serve by removing from heat, stirring in the remaining butter, and sprinkling with chopped parsley before serving.
Notes
For a lighter option, swap chicken for turkey or use whole grain noodles.
